Delicious Eggs Benedict Recipe

Ingredients for 4 persons:

  • 5 liters of water
  • One tablespoon flour
  • A dash of vinegar
  • A little salt
  • A dash of cream
  • Salt and pepper
  • Nutmeg
  • 8 eggs (very fresh)
  • White vinegar
  • 200 grams of bacon
  • Toast – 200 g butter
  • 2 egg yolks
  • The juice of half a lemon
  • Cayenne pepper

Preparation

Put a large pan of water on the fire and wait until the water boils. Mix a tablespoon of flour in a bowl, add a splash of vinegar and some salt. Stir this mixture into the boiling water and bring it back to a boil.

Hollandaise sauce

Melt the butter in a small pot, and then let stand and remove any residual milk skimmings. Mix two egg yolks with the juice of half a lemon and two tablespoons of hot water in a pan placed on a low fire or in a hot water bath and beat until foamy. By stirring this gently, little by little, the butter is clarified and it becomes a smooth, light saucy consistency. Season with a pinch of salt and cayenne pepper.

Final Preperation

Bring a large amount of water to a boil. Add 1 part white vinegar per liter of water. In a second pot bring some lightly salted water to a boil. Break the eggs into individual containers and gently slip the eggs carefully into the boiling vinegar water (takes longer for hard boiled eggs as seen on our how to hard boil eggs instructions). Turn the heat down so the water is barely rippling. The eggs take three minutes to poach. They are done when the egg white coagulates around the yolk. Use a slotted spoon to gently lift the eggs out of the water and place them into the pot with salted water to get rid of the vinegar taste. Remove eggs after 1 minute and let drip onto a clean cloth. Cut away any irregularities. Fry some bacon until it is crisp and golden brown. Serve Eggs Benedict on warm toast, topped with the sauce.
